Tartar sauce is a delicious Old Polish delicacy added for eggs, cold cuts, mushrooms, or fish. If I were to point out the snacks based on which sauce goes down the fastest for me at the events I organize, I would not hesitate to choose this dip. Properly prepared and seasoned, it disappears faster than everything else on the table. For this classic delicacy, there is no single, unchangeable recipe – everyone makes it a bit their own. Today I will present my personal Polish recipe for how to make the Old Polish tartar/tartare sauce on natural yogurt with homemade mayonnaise, tinned cucumber, and forest mushrooms (the bay boletes – yes, we do actually do mushroom collecting in Poland; if you are not a forest person, you can use champignons from a grocery store).

Natural yogurt, homemade mayonnaise, canned cucumber, forest mushrooms (boletus, porcinis, bay boletes, eventually champignons), dill, horseradish, mustard, salt, and pepper.
🔪 Instructions Step-by-Step
I pour natural yogurt into the main mixing bowl.
I add my homemade mayonnaise.
I pour salt and pepper, preferably freshly grounded.
I cut cucumbers. I like rather “crispy” sauces, so I don’t do it too finely. I want my teeth to be busy later.
Cucumber to the main bowl.
I cut a washed bunch of dill and add it to the bowl.
I take out some pickled mushrooms from my homemade supplies. I slice them and add them to the bowl. I eat instantly the remaining mushrooms from the jar.
I add horseradish and mustard.
I have all the ingredients in the dish – I mix. Long and accurate.
My Old Polish Tartar sauce is ready! I put it into the fridge for a couple of hours so that the flavors can become friends with each other. The dip will be the tastiest the next day. However, in my case, it usually does not last even several hours and the bowl quickly becomes empty (then it’s time to make another one!).
- 400 g natural yogurt (one large yogurt from the store)
- 100 g homemade mayonnaise
- 1-2 pickled cucumber
- 5-6 pickled mushrooms
- 1 tbsp horseradish
- 1 tbsp mustard
- 1 shoot fresh dill
- 1 tsp salt
- 1 tsp freshly ground black pepper
- Finely cut cucumbers, mushrooms, and fresh dill.
- Add all the ingredients (yogurt, mayonnaise, cucumbers, mushrooms, horseradish, mustard, dill, salt, and pepper) to one dish (a large bowl). Mix.
- (Optional) Put it into the fridge for a few hours (preferably a full day).
- Ready – and delicious! Serve with eggs, meat, or fish.

Generally yes, but it depends on the ingredients used. Natural yogurt itself is a valuable source of calcium and Lactobacillus. At the ratio of 4:1 natural yogurt to mayonnaise, the resulting tartar sauce has about 170 kcal per 100 g. To make it healthier, it is best to give up on mayonnaise completely, and use only the yogurt and seasonings.
